So regardless of sensitivity you can always use your full turning speed. So apparently sensitivity only changes the curvature, meaning 0 is always 0 on any axis and 100 is always 100 on every axis. It's a matter of preference, but you'll probably have an easier time aiming and flying if you bind pitch and yaw to the stick in Squadrons.
Because I have gotten used to the mindset of movement on the joystick determining where my craft is going, I keep traditional flight controls for flight sims - pitch and roll on stick, yaw on pedals, and when I'm in a space sim I bind pitch and yaw to the stick and roll to the pedals. Roll will no longer turn you, it will simply roll the spaceship while it continues to move in a straight line. Spaceships are different because there's no atmosphere and no lift. The ailerons shift, causing the plane to roll, and lift gains a vertical component that turns the airplane. If I want to turn the airplane left or right I move the stick/yoke left and right. When I am flying an airplane, if I want to pitch up and down I move the stick/yoke backwards and forwards. Pitch, Roll, Yaw: Think about this from a "how do I want my ship to move" mindset instead of a "this has to mirror atmospheric aircraft!" mindset. Sensitivity: Play around with it and find one that works for you. My recommendation for everyone: Deadzone at 0% unless your HOTAS is registering false inputs, then find the lowest % you can.
